Ingredients

  • 1 2/3 cup unbleached all-purpose flour
  • 2/3 cup stoneground cornmeal
  • 1 1/2 TBSP baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/4 cup of butter softened
  • 1 cup whole milk
  • 2 TBSP canola oil
  • 2 large eggs

Instructions

  1. Preheat oven to 350.

  2.  Line & grease a 24-count mini muffin pan. Set aside.

  3. In large bowl, combine flour, cornmeal, baking powder, & salt.

  4. In a separate bowl, cream together sugar & butter with a mixer. 

  5. Slowly add the dry ingredients to the creamed sugar & butter. Using a fork to stir completely. Your batter should be fluffy & sticky. 

  6. Spoon mixture into greased muffin tins. Bake at 350F preheated oven for 18-20 minute. Use a toothpick in the middle of the muffin to test doneness. 

  7. Serve muffins warm or room temperature. 

  8. Enjoy!
