We love quick and easy lunch options for the kids and these roll-up are the perfect bites for kids. No big sandwiches to overwhelm them, for the kids 2 pieces are a great lunch served with some grapes and baby carrots on the side.

One of the best parts of making these sandwich roll-ups is that you can make lunch quickly for a crowd. For us all the kids can share one large burrito sized tortilla rolled up.

This recipe also works with a number of other deli meats if you want to substitute – roast beef, pastrami, chorizo, you name it! If you want to switch up or add to the vegetables, you can throw in some thinly-sliced cucumber or avocado. You can make a variety of them for a party platter.

These roll-ups transport well, so you can definitely bring them along for a picnic or to a party as an appetizer.  Plus the turkey meat makes this a relatively healthy option!

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup kalamata olives chopped
  • 2 burrito sized tortillas
  • 1/2 pound sliced turkey breast meat
  • 6 slices Provolone cheese
  • 4 leaves romaine lettuce rib removed
  • 1 vine tomato thinly sliced

Instructions

  1. Mix the mayonnaise and olives in a small bowl.
  2. Place saran wrap under the two tortillas.
  3. Add the lettuce to the tortillas then smear on the mayonnaise on top.
  4. Layer on the tomatoes, cheese and turkey, then roll up tightly.
  5. Refrigerate for an hour, then unroll the saran wrap and slice.
